Recipe: Apricot Granola (using matzah farfel and apricot jam)

Breakfast and Brunch
APRICOT GRANOLA

"Great as a light breakfast or snack or in a bowl with a little milk."

7 cups matzah farfel
1 cup slivered almonds
1 cup raisins
1 cup dates
1 tsp. salt
1 tsp. vanilla
1/3 cup honey
1 (10 oz.) jar apricot jam

In a large bowl, mix together all the ingredients - using your hands works best. Place foil on a large cookie sheet and spread the mixture evenly over the surface.

Place the pan in the oven and bake at 350 for about 20 minutes to a half hour until it starts to brown. Take the mixture out and stir it every 5 to 7 minutes to make sure it doesn't stick and burn. Remove the mixture from the oven when it's done and let cool.

Break it apart and store in a tight container or resealable plastic bag.

Makes approximately 9 cups of granola
