Recipe(tried): Onion, Cheese and Bacon Quiche (using half and half and Swiss cheese)

Breakfast and Brunch
ONION, CHEESE AND BACON QUICHE

2 lb yellow onions, chopped
3 tablespoons butter
1 1/2 tablespoons flour
3 eggs
2/3 cup half-and-half
1 teaspoon salt
Ground black pepper, to taste
1 pinch ground nutmeg
1 (9-inch) pastry shell, partially baked
4 slices bacon, cooked crisp and crumbled
3/4 cup grated Swiss cheese

Saute the onions in a heavy skillet with the butter over very low heat, stirring occasionally until they are extremely tender and a golden yellow. This will take about an hour.

Sprinkle onions with the flour; mix well and continue to cook slowly for another 3 minutes or so. Remove from heat and cool.

Whisk together the eggs and half-and-half in a bowl. Blend in the salt, pepper and nutmeg; set aside.

Arrange the onions in the bottom of the pastry shell. Sprinkle on the bacon pieces. Pour the egg custard over the top and sprinkle on the cheese.

Bake in the upper third of a 375 degree F oven for 25-30 minutes, or until the quiche has puffed and browned.
