Recipe: Arkansas Pecan Chicken Dish (using buttermilk and sesame seeds)

ARKANSAS PECAN CHICKEN DISH

1 frying chicken, cut up, skin removed
1/2 cup butter
1 cup buttermilk
1 egg, slightly beaten
1 cup flour
1 cup pecans, chopped
1/4 cup sesame seeds
3/4 teaspoon salt
1 tablespoon paprika
1/2 teaspoon ground black pepper

Remove and discard skin from the chicken.

Melt butter in a large shallow baking dish. Combine buttermilk and
beaten egg in a flat dish. Mix flour, pecans, sesame seeds and seasonings in another dish.

Dip the chicken pieces in milk mixture, then in flour mixture. Put the chicken in baking dish and turn to coat with butter. Arrange in a single layer in baking pan.

Bake for 1 1/2 hours, uncovered, at 350 degrees F. Baste with drippings 2 or 3 times during baking time.

Makes 6 servings
