Recipe: Artichoke Squares (using artichoke hearts, eggs, cheese and bread crumbs)

2 jars (6 oz. each) marinated artichoke hearts
1/2 medium onion, minced
1 clove garlic, minced
4 large eggs
1/4 cup bread crumbs
1/4 tsp. salt
1/8 tsp. oregano
1/8 tsp. ground black pepper
1/8 tsp. Tabasco sauce
1/2 lb. sharp cheddar cheese, grated
2 tbsp. minced fresh parsley
Drain marinade from 1 jar of artichokes into small skillet, add onion and garlic; cook gently until onion is transparent.
Drain and discard marinade from the remaining jar of artichokes, or if desired, save the marinade for another use (like for a salad dressing). Finely chop artichokes from both jars; set aside.
Beat eggs, stir in crumbs and seasonings, then cheese, parsley, artichokes and onion garlic mixture. Pour into greased (10 x 6 x 1 3/4-inch) baking dish.
Bake in 325 degree F oven until center feels firm. Remove from oven and let stand 15 minutes before cutting into 1-inch squares.
Serve warm, cold or at room temperature.
