Recipe(tried): Aunt Rose's Potato Salad

Salads - Potato, Pasta
AUNT ROSE'S POTATO SALAD

1 red boiling potato (per person).

Boil potatoes in skin until fork goes through easily. Drain, cool, and peel off skins. Cut into medium size pieces.

Mix with:
1 Tbs. white vinegar
1 Tbs. olive juice (from olives)
1 jar chopped green pimento olives
chopped celery (as much as needed)
grated onion (to taste)
2 hard boiled eggs, chopped
chopped parsley
salt and pepper to taste

Mix all of above with mayonnaise, enough to make mixture nice and smooth. Chill well. Sprinkle with paprika before serving. DELICIOUS!
