Recipe(tried): Grandma Ordini's Macaroni Salad

Salads - Potato, Pasta
GRANDMA ORDINI'S MACARONI SALAD

1 Lb. uncooked elbow macaroni
1 small onion
2 stalks celery
1 large carrot
1 Bell pepper
3 Tbs. fresh parsley
4 Eggs (hard boiled)
Paprika

DRESSING:
4 Tbs. Lemon Juice
1 Tbs. Salt
1 tsp. Spicy Mustard
3 Tbs. Catalina Salad Dressing
1 Pt. Miracle Whip (or larger)

Boil eggs. Cool in refrigerator. Cook elbow macaroni (al dente). Cool in cold water until ready to fold into other ingredients. Set aside a sprig of parsley and 5 slices of egg for garnish. Chop remainder of eggs,vegetables and
parsley.. Mix together and set aside. Mix ingredients for dressing. Blend well. Drain macaroni. In a large pot, fold together , macaroni,vegetables and dressing until well blended. Transfer to serving dish or large bowl. Garnish.
Sprinkle with paprika. Chill until ready to serve.

Serves a picnic crowd. (30)
