Recipe(tried): Avocado-Alfalfa Sprout Spread

An old recipe but it never ceases to please. Easy to make and healthy too! Great for parties or snacks! I was given the recipe at a church cooking lesson.

Avocado/Alfalfa Sprout Spread

1 medium avocado
1 tablespoon lemon juice
1 tablespoon mayonnaise
1 teaspoon green onion minced
1/8 teaspoon salt
twist of black peppercorns
3/4 cup alfalfa sprouts chopped fine
paprika

Peel and mash avocada and stir in lemon juice, mayonnaise, green onion and salt and pepper. Stir in alfalfa sprouts. Use as a spread for toast rounds & cucumber slices. Sprinkle with paprika. Yummy with very thin rye crispy breads bought in packages.
