Recipe: Bahama Breeze Crab Claws St. Thomas wih Passion Fruit Butter

BAHAMA BREEZE'S CRAB CLAWS ST. THOMAS

12 ounces blue crab claws
3/4 cup passion fruit butter (recipe follows)
1 loaf Cuban bread or French baguette

Heat oven to 500 degrees F.

Place crab in a baking dish.

Melt passion fruit butter in microwave and pour over crab.

Slice bread into desired size and place on a baking sheet.

Place crab and bread into the oven. Remove from oven when bread is golden and crab is bubbling hot, 4-5 minutes.

PASSION FRUIT BUTTER

4 ounces butter
1/4 cup passion fruit pulp (no seeds) or nectar
1 tablespoon sugar
1/2 teaspoon Cajun seasoning

Heat butter in the microwave in 10-second intervals until the butter is softened but not melted.

With a whisk, combine passion fruit pulp or nectar, sugar and Cajun seasoning. Use immediately or refrigerate until
needed.

Makes 2 servings
