Herbs and Spices
The spice mix used in Kofta can be purchased from import stores and is often called Middle Eastern Allspice, but is known to Middle Easterner's as Baharat.

BAHARAT
Makes 1/2 cup

1 1/2 Tbsp. ground allspice
1 Tbsp. black pepper
1 Tbsp. ground cumin
1 Tbsp. ground coriander
2 tsp. ground cloves
2 tsp. ground cinnamon
1/2 Tbsp. ground nutmeg
2 tsp. ground red pepper
2 tsp. ground cardamom
1 tsp. ground ginger

Pulse in grinder for powdery texture and store in airtight container.
