Recipe(tried): Baked Corned Beef Hash and Eggs

I use canned corn beef hash but you could use homemade.

Corned Beef Hash and Eggs

Spread corned beef hash in a shallow baking disn or pan. Using the back of a spoon, make as many indentations in the hash as eggs you plan to make. Put hash in a 350 degreeF oven for 10 min. Remove from the oven and place an egg in each indentation. Bake at 350 degrees 12 - 15 min. or until eggs are set.

This is nice because it is so easy. You can put a little grated cheese on top of each egg or sprinkle with some chooped parsley. I either serve with grapefruit halves with a maraschino cherry in the center or bananas and either strawberries or raspberries with whipped cream and English Muffins with an assortment of jams...orange marmalade, strawberry jam etc.
