GREEN BEANS WITH MUSHROOMS AND DILL
2 1/2 ounces green beans, trimmed
2 ounces olive oil
1 1/4 ounces shallots, minced
8 ounces white mushrooms, sliced
1 3/4 teaspoons salt
3/4 teaspoon ground black pepper
1 1/4 ounces fresh dill, chopped
Boil the greens in salted water until bright green in color, about 1 to 2 minutes. Shock (dip in ice cold water) and reserve.
Render the bacon over medium heat until crisp, about 6 minutes. Remove the bacon and drain on absorbent paper toweling.
Saute the shallots in the bacon fat, about 5 minutes.
Add the mushrooms and saut them, allowing moisture to evaporate, about 5 minutes.
Add the green beans and cook them until they are tender, about 5 minutes.
Season to taste with salt and pepper. Garnish with the dill and serve immediately.
