Recipe: Finnish Pancakes

Breakfast and Brunch
I haven't tried this version yet but it is similar to most for Finn pancakes. I live in Thunder Bay and eat at the Hoito often - usually pancakes and bacon!

FINNISH PANCAKES

2 beaten eggs
2 Tablespoons sugar
1 teaspoon salt
2 cups milk
1 1/2 cups sifted flour
1 Tablespoon melted butter

Beat sugar and salt with eggs. Add milk and flour alternately to egg mixture. Stir in butter.

Using a scant 1/4 cupful, fry on hot griddle.

Serve with syrup and butter or berries of your choice.
