Recipe(tried): Baked Doughnut Muffins and Krispy Kreme-Inspired Baked Doughnuts
Breads - Muffins, Quick BreadsBAKED DOUGHNUT MUFFINS
FOR THE DOUGHNUTS:
1 1/2 cups plain flour
1/2 cup sugar
2 teaspoons baking powder
1/4 teaspoon nutmeg
1/4 teaspoon salt
1 large egg
1/2 cup milk
1/4 cup plus 3 tablespooons butter, melted, divided use
1/2 teaspoon vanilla extract
FOR THE TOPPING:
1/3 cup sugar
1/2 teaspoon ground cinnamon
Preheat oven to 350 degrees F (180 degrees C). Grease and lightly flour a 12-cup muffin tin.
In a small bowl, sift together flour, 1/2 cup sugar, baking powder, nutmeg, and salt.
In a seperate medium bowl, whisk together the egg, milk, 1/4 cup melted butter and vanilla.
Add dry ingredients to this mixture, mixing until just moistened. DO NOT over mix - lumpy is okay. Fill the prepared muffin tins 3/4 full.
Bake for 20 to 25 minutes or until an inserted toothpick comes out dry.
TO MAKE THE TOPPING:
In a small bowl or cup, mix 1/3 cup sugar and cinnamon together.
Brush muffins with the remaining melted butter and roll in sugar/cinnamon. YUM-YUM!!
KRISPY KREME-INSPIRED BAKED DOUGHNUTS
3 cups flour
1 cup sugar
2 teaspoons cinnamon
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon nutmeg
1/2 teaspoon cloves
1 cup buttermilk [or soured milk]
1/2 cup butter, melted
3 eggs
1 tablespoon honey
confectioner's sugar
Preheat oven to 400 degrees F (200 degrees C). Lightly grease a doughnut baking pan.
In a medium bowl, mix flour, sugar, cinnamon, baking powder, baking soda, nutmeg, and cloves.
Mix buttermilk, butter, eggs, and honey in a separate medium bowl, and stir into the dry ingredients. Then spoon the mixture onto the prepared pan in doughnut shapes.
Bake the doughnuts for 12 minutes in the preheated oven, until golden brown.
Sprinkle confectioner's sugar on top of the doughnuts while warm. [this one I haven't tried]
