Recipe(tried): Baked Salmon Fillets with Potato Chip Crust - Thank You: sounds like another lovely dinner at Chez Gina's
Main Dishes - Fish, ShellfishGina...just wanted to let you know we tried the Baked Salmon Fillets with Potato Chip Crust last night! It was delicious & we'll add it to our file of salmon recipes. I did vary the recipe somewhat. Lightly spread the salmon with Dijon mustard & then just pressed finely crushed ranch flavored potato chip crumbs over both pieces. Only took about 14 minutes to bake.
I served cheesy-herbed whole-grain sourdough french bread, toasted in toaster oven, along with some yummy steamed fresh asparagus. Lemon from our tree squeezed over both the salmon and asparagus was all the garnish needed.
