Recipe: Baked Shrimp (with bread crumbs, Parmesan, and white wine) (serves 2)

BAKED SHRIMP

3/4 pound large shrimp, peeled and deveined
2 tablespoons plain bread crumbs
Salt and fresh ground pepper
1 teaspoon olive oil
1/4 cup dry white wine
2 tablespoons grated Parmesan cheese
2 tablespoons broken walnuts

Preheat oven to 350 degrees F.

Place shrimp in a baking dish just large enough to hold them in one layer. Sprinkle with bread crumbs and salt and pepper to taste, tossing to coat. Drizzle with oil. Pour in wine.

bake for 10 minutes. Remove from the oven and turn on broiler. Sprinkle Parmesan cheese and walnuts on top. Place under broiler just until browned, about 1 minute, watching carefully.

Makes 2 servings
