Recipe: Tuna Croquettes (Crisco recipe, 1950's)

TUNA CROQUETTES

3 tablespoons melted Crisco shortening
1/3 cup flour
2 teaspoons salt
1 cup milk
2 cups flaked tuna fish
1 tablespoon chopped onion
2 tablespoons chopped parsley
2 tablespoons lemon juice
1 egg
1/2 cup fine dry bread crumbs
Crisco (for frying)

Combine melted Crisco, flour, salt in a saucepan. Whisk in milk until smooth. Cook until thick. Remove from heat; cool.

When sauce is cool, add tuna fish and seasonings. Shape into croquettes. Dip in egg, then crumbs.

Fry in deep Crisco heated to 375 degrees F (or when a cube of bread browns in 60 seconds), until brown. Serve hot

Makes 6-8 large croquettes
