Recipe(tried): Baked Sweet Potato

We do baked sweet potatoes often - they are such a good source of vitamins and nutrients.

You can bake them in the oven like a regular potato, but I usually do them in my microwave. Wash them well, and pierce them several times with the tine of a large cooking fork. Then microwave on high about 4 minutes for one potato, and longer by about 2 minutes for each additional potato.

When it is soft to the squeeze, take it out, split it in half, spread a bit of butter or margarine on each side, sprinkle with some nutmeg and a little brown sugar or turbinado sugar. Return to microwave for just a minute. Then serve.

I've found that you don't have to bake them in a regular oven nearly as long as a regular potato - I can't tell you exactly how long, because I mainly use the microwave. It's always important to pierce the skins of both sweet potatoes and regular potatoes when baking to prevent a messy "explosion"!
