Recipe(tried): Baking Shortbread in a Mold - Information and Recipes

Good morning. Mary If you bake a TRUE shortbread recipe you do not need to prepare the cast iron mold. Why???? because a true Scottish shortbread cookie recipe has only 4, ingredients & a lot of butter.
1) flour & cornstarch
2) sugar (extra fine)
3) butter
4) salt
That all. You will notice that the amount of butter is approx 85% to 90% of the flour in weight. That means that the butter will provide the greasing for the mold. The cookies come out of the mold very nicely. NO LIQUIDS, just the 4 ingredients I mentioned to you. Also some may say rice flour instead of the cornstarch...they are interchangeable.
Mary, for the sugar measure it out & then place it in a food processor or a blender for about 3 or 4..... 5, second blasts. The sugar will melt sooner in baking this way. Because it only takes about 13-15, minutes.
Mary you will not fail it is that easy. I have one of those molds.
Mary if after mixing you find the dough to soft to mold place it in the freezer or fridge till it is firm then begin molding right into the cookie mold.
