SUGAR-FREE BANANA COOKIES
3 large bananas, mashed
2 cups rolled oats
1 cup chopped dates
1/3 cup oil
1 teaspoon vanilla extract
Combine bananas, oats, dates, oil and vanilla. Allow to rest 15 minutes to let flavors mingle.
Preheat oven to 350 degrees F.
Drop by teaspoonfuls onto an ungreased cookie sheet.
Bake for 20 minutes or until brown.
TIPS: Riper bananas make sweeter cookies. Easiest way to mash bananas, a potato masher. Easiest way to chop dates, cut with kitchen shears.
