JASMINE RICE WITH FETA AND GREEN PEAS
3 cups cooked A Taste of Thai Jasmine Rice, set aside keeping warm
2 Tbsp peanut oil
3 scallions, chopped
1/4 cup chopped fresh basil
1/4 cup chopped fresh parsley
zest from 1 large lemon
2 Tbsp A Taste of Thai Garlic Chili Pepper Sauce
3 Tbsp lemon juice
1/2 tsp salt
1 tsp sugar
1 cup frozen peas, thawed
1/2 lb (227 g) feta cheese, crumbled
In a skillet, heat peanut oil. Add scallions, basil, parsley and lemon zest. Cook 1 minute. Remove from heat.
Place rice in a large bowl. Stir in scallion mixture. Add Garlic Chili Pepper Sauce, lemon juice, salt, sugar and peas. Mix well. Fold in feta cheese.
Serve warm or at room temperature.
