BANANA QUICK SQUARE
1 1/4 cups all purpose flour
1 teaspoon ground cinnamon
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup shortening
1 cup sugar
2 eggs
1 large ripe banana, cut up
Sift together flour, cinnamon, baking soda and salt; set aside.
Put shortening, sugar, eggs and cut up banana into blender container. Blend to mix. Turn off blender and add dry ingredients. Stir into the banana mixture using a thin rubber spatula. Cover blender and process just until well mixed.
Pour batter into a greased 9x9x2-inch baking pan.
Bake in a preheated 350 degree F oven for 40 minutes or until beginning to pull away from sides of pan.
Makes 16 squares
