Breads - Yeast BreadsBATTER OATMEAL BREAD
2 3/4 cups all purpose flour
1/2 cup quick rolled oats, uncooked
2 teaspoons salt
1 cup warm water
1 package active dry yeast
1 egg, room temperature
1/4 cup molasses
1/4 cup vegetable shortening
Mix flour, oats and salt together in a bowl; set aside.
Put 1 cup warm water, yeast, egg, molasses and shortening into blender container. Add 1/2 of the flour mixture. Cover and blend until flour disappears. (Stop blender, remove cover, and scrape down sides of the blender container with a rubber spatula several time while blending.) Turn off blender and add remaining flour mixture and repeat mixing.
Turn batter into a greased bowl. Cover and let rise in a warm place, 40 minutes, or until doubled.
Press some of the air out of the dough and turn into a greased (9x5x3-inch) loaf pan. Cover and let rise for 30 minutes.
Bake in a preheated 350 degree F oven for 50-60 minutes or until hollow when tapped.
Makes 1 (9x5-inch) loaf
