BANANA S'MORES
FOR THE CRUST:
3/4 cup graham cracker crumbs
1/2 cup Bisquick baking mix
2 tbsp. sugar
FOR THE TOPPING:
1/4 cup margarine or butter, melted
2 or 3 medium bananas
3 tbsp. lemon juice
1 1/3 cups milk
1 pkg. (3 1/2 oz) instant vanilla pudding and pie filling
3/4 cup miniature marshmallows
16 chocolate stars
Mix cracker crumbs, baking mix and sugar; stir in margarine until moistened. Press in bottom of square microwavable dish, 8x8x2-inches. Microwave uncovered on high (100%), rotating dish 1/2 turn every minute, until crust bubbles up slightly and then begins to flatten, 1 1/2 to 3 minutes. Cool 10 minutes on wire rack.
Slice bananas; dip into lemon juice and arrange on crust.
Beat milk and pudding and pie filling (dry) until smooth. Stir in marshmallows. Spread pudding mixture over banana slices; press chocolate stars onto pudding mixture. Refrigerate no longer than 1 hour, if desired.
High Altitude Directions (3500 to 6500 ft.): Grease bottom of microwavable dish.
