CRUNCHY ICE CREAM SANDWICHES
2 1/2 cups Bisquick baking mix
1 1/2 cups Nature Valley granola (any flavor, crushed)
1 1/4 cups packed brown sugar
1/2 cup margarine or butter, softened
1 tsp. vanilla
2 eggs
1/2 gallon ice cream (any flavor)
Heat oven to 375 degrees F.
Mix all ingredients except ice cream in large bowl thoroughly Drop dough by rounded teaspoonfuls about 2-inches apart onto unqreased cookie sheet.
Bake until light brown, 10 to 12 minutes. Immediately remove from cookie sheet; cool.
Crush 5 or 6 of the cooled cookies.
Cut ice cream crosswise into about 1/2-inch slices Cut each slice into 2 rounds with about 2 1/2-inch round cutter. Place 1 round ice cream between 2 cookies. Roll edge of ice cream in cookie crumbs. Store cookies wrapped in aluminum foil in freezer.
High Altitude Directions (3500 to 6500 ft.): Heat oven to 400 degrees F. Decrease baking mix to 2 cups and brown sugar to 1 cup; add 1/2 cup Gold Medal all-purpose flour.
Makes 7 or 8 sandwiches
