COBBLER PIE
1/4 pound (1/2 cup) butter
1 cup sugar
1 cup flour
2 teaspoons baking powder
1/2 teaspoon salt
3/4 to 1 cup of milk
1 egg
3 to 4 cups fruit (1 can)
Preheat oven to 350 degrees F. Melt butter in a 13x9-inch Pyrex dish in oven..
Measure together sugar, flour, baking powder and salt.
Stir together milk and egg and blend with dry ingredients. Pour batter over butter in pan.
Spread fruit and juice over batter. Any fruit with juice will do - cherries, apples, peaches, plums.
Bake at 350 degrees for 45 minutes to 1 hour or until top is lightly brown.
Serve hot or warm with ice cream or whipped cream.
