BASIC BISQUICK COFFEE CAKE
2 cups Bisquick Baking Mix
2 tablespoons sugar
3/4 cup milk
1 egg
Heat oven to 400 degrees F.
Combine ingredient. Beat hard 30 seconds. Spread into greased 9 inch round layer pan or 8 or 9-inch square pan.
Bake for 20-25 minutes.
VARIATIONS:
- For richer batter: Add 2 tablespoons more sugar, 2 tablespoons melted shortening or salad oil.
- Additions to the batter: If desired, fold 1 cup fresh or well drained canned berries or 1 cup cut-up dates or figs into the batter.
- To add a topping: After putting the batter in the pan, top with your favorite topping (pie filling, sliced fruit, etc.) or sprinkle with a mixture of 1/4 cup sugar, 2 tablespoons Bisquick, 2 tablespoons cinnamon, 2 tablespoons softened butter; blended until crumbly.
