Recipe: Basil and Tomato Feta Bruschetta
Misc.BASIL AND TOMATO FETA BRUSCHETTA
1 lb. plum tomatoes, diced (2 1/2 cups)
1 pkg. (4 oz.) Athenos Crumbled Feta Cheese with Basil and Tomato, finely chopped
1/2 cup finely chopped red onion
3 Tbsp. chopped fresh parsley
2 Tbsp. olive oil
1 Tbsp. chopped pitted ripe olives
1/4 tsp. ground black pepper
1 loaf French bread, cut into 1/2-inch slices
Mix tomatoes, cheese, onion, parsley, oil, olives and pepper. Set aside.
Brush bread slices lightly with additional oil. Place on cookie sheet.
Broil on each side until lightly toasted.
Top each toast slice with about 2 tsp. of the tomato mixture.
Makes 3 dozen slices
