BEEF SAUSAGES IN TOMATO SOUP
between 6 and 12 beef sausages
1 largish onion
320g tin of tomato soup
enough milk (any kind) to fill the empty soup tin
Peal and slice onion. Place in a pot with sausages, cover with water and simmer until the onion and sausages are cooked.
Empty water and peel sausages (optional). Empty soup into the pot. Fill the soup tin with milk and stir that measure into the soup. Bring to a simmer and stir for 5 minutes.
Place sausages and onions in with the soup and leave to simmer for a further five minutes. Thicken with cornfour.
Serve with mashed potatoes and green peas or beans.
The most expensive part of this meal are the sausages.
It is an excellent tummy filler in the winter. Most children seem to enjoy it.
