Beef Steak with Spicy Potatoes
Makes 4 Servings
1 boneless beef top sirloin steak, cut 1 inch thick (about 1-1/4 pounds)
2 large all-purpose potatoes, cut diagonally into 1/2-inch thick slices
1 tablespoon olive oil
1 teaspoon Spicy Seasoning Mix (recipe follows)
Salt
Spray rack of broiler pan with cooking spray. Arrange potatoes on one side of rack. Combine oil and seasoning mix; brush potatoes with 1/2 of seasoned oil.
Place steak on other side of rack in broiler pan so surface of beef is 3 to 4 inches from heat. Broil 16 to 21 minutes for medium rare to medium doneness and until potatoes are tender, turning once and brushing potatoes with remaining seasoned oil.
Carve steak into slices; season beef and potatoes with salt, as desired.
Grilling Note: Place well-trimmed steak and potatoes on grid over medium, ash-covered coals. Grill, uncovered, 17 to 21 minutes for medium rare to medium doneness and until potatoes are tender, turning occasionally and brushing potatoes with remaining seasoned oil.
Spicy Seasoning Mix:
Combine 3 tablespoons chili powder, 2 teaspoons ground cumin, 1-1/2 teaspoons garlic powder, 3/4 teaspoon dried oregano leaves and 1/2 teaspoon ground red pepper. Store in airtight container. Shake before using to blend. Yield: About 1/4 cup.
