SLOPPY JOES WITH RICE
3/4 pound ground beef
1 small onion, sliced
1 small red or green bell pepper, cut into strips
1 cup barbecue sauce
1 1/2 cups water
1/2 teaspoon salt
FOR SERVING:
1 1/2 cups Minute Original Rice, uncooked*
Shredded cheddar cheese (optional)
Brown meat, onion and pepper in large skillet on medium heat. Drain.
Stir in barbecue sauce. Bring to boil. Reduce heat to low; cover and simmer 5 minutes.
Meanwhile, bring water and salt to boil in medium saucepan. Stir in rice; cover. Remove from heat. Let stand 5 minutes. Fluff with fork.
Serve meat mixture over rice. Sprinkle with cheese.
*Since the meat mixture is served over the rice, about 2 cups hot cooked rice may be substituted for the Minute Rice (the Minute Rice will yield 2 1/3 cups cooked).
