BEETS AU GRATIN
2 medium-sized beets, cooked, peeled, and sliced
1/2 cup bechamel sauce (recipe)
1/3 cup of parmesan cheese
2 tbsp butter
Preheat oven to 350 degrees F.
In a buttered oven proof dish alternate beets and sauce with parmesan cheese with top layer of bechamel and parmesan. Dot with butter.
Bake in a 350 oven F for 15 to 20 minutes or until golden.

1 tablespoon flour
1 cup skim milk
1/2 cup green peas
1 teaspoon fresh dill
1 teaspoon fresh tarragon
1/2 cup low-fat cheddar
1/2 cup coarse cracker or bread crumbs
Preheat oven to 350 degrees F.
Steam beets until tender crisp.
In heavy saucepan combine flour and 1 tablespoon of milk. Heat over low heat until flour is cooked and mixture is quite thick stirring constantly to prevent browning.
Slowly stir in the remaining milk. Increase heat to medium
and continue cooking until sauce thickens.
Add peas and cook an additional minute.
Remove from heat and stir in cheese and fresh herbs until blended. Fold in beets. Pour mixture into a 8x8 baking dish and top with crumbs.
Bake for 25 to 30 minutes.
