BOUNTIFUL BUTTERNUT SQUASH
"Cubes of gold-orange butternut squash are mixed with sauteed apples and onion. A hint of spices and cottage cheese are added before piling into the shells. Toped off with a sharp Cheddar cheese, this squash bakes into a delicious dish."
1 medium-size butternut squash
1/2 cup water
1/4 cup chopped onion
1 cup finely diced, unpeeled apple
2 tbsp. butter or margarine
1 cup cottage cheese
1/8 tsp. ground cinnamon
1/8 tsp. ground ginger
1/4 tsp. salt
1/4 tsp. ground black pepper
1 cup grated Cheddar cheese
Dried parsley
Slice squash in half, lengthwise. Place face down on a baking dish. Add 1/2 cup water.
Bake squash at 350 degrees F for 45 minutes or until flesh is tender and shell is firm enough to be stuffed.
Meanwhile, saute onion and apple in the butter until onion is transparent. Stir in cottage cheese and seasonings.
When squash is tender, cube it and carefully scoop it out, leaving the shells. Combine squash with apple mixture. Spoon back into shells. Top with the cheese and dried parsley.
Bake (no water in the dish) at 375 degrees F for 15 minutes or until steamy and heated through.
Makes 4 servings
