2 pk Dry yeast
1/3 c Warm water
1 1/2 c Milk
1/3 c Vegetable shortening
1/4 c Sugar
2 ts Salt
2 ts Nutmeg
2 Eggs, lightly beaten
4 1/2 c Flour
1/2 c Melted butter
1 c Sugar mixed w/1 tsp cinnamon
1. Sprinkle the yeast over the warm water in a small bowl and let it dissolve for 5 minutes. Put the milk and shortening in a saucepan and heat until the shortening is melted. Cool to lukewarm.
2. Pour the yeast mixture into a large mixing bowl and add the milk mix. Stir in the 1/4 cup sugar, salt, nutmeg, eggs and 2 cups flour. Beat briskly until well blended. Add the remaining 2 1/2 cups flour and beat until smooth. Cover the bowl and let double in bulk, about 1 hour.
3. Dust a board generously with flour and turn the dough mass onto it. This dough is soft and needs enough flour on the board to prevent sticking, but is easy to handle. Pat the dough into a round about 1/2 inch thick. Use a 3 inch doughnut cutter and cut out the doughnuts, placing them (and the doughnut holes) on greased baking sheets, 1 inch apart. These don't spread much; they rise. Preheat oven to 450F. Let the doughnuts rest and rise for 20 minutes uncovered. Bake about 10 minutes or a little longer, until they have a touch of golden brown. Remove from the oven. Have ready the melted butter and a brush. On a sheet of wax paper, spread the cinnamon sugar. Brush each doughnut and doughnut hole with butter and roll in the cinnamon sugar. Serve hot.

This as a pizza with a thick, aromatic, bready crust reminiscent of Italian focaccia pan bread.
Makes one large pizza.
Preheat oven to 450 degree F (hot oven).
Crust
1 1/3 cup warm water
1 Tbs. activated dry yeast
1 tsp. salt
1 Tbs. dry minced onion
1 1/2 tsp. dry oregano
1 1/2 tsp. dry basil
1 clove garlic or 1/2 tsp. minced garlic or garlic powder
3 Tbs. virgin olive oil
Sufficient unbleached flour to make a soft dough (roughly 1 1/2 to 2 cups)
Place water in medium mixing bowl or bowl of electric mixer with dough hook. Add yeast, oregano, basil, garlic and onion. Let stand a few minutes to
Dissolve yeast. Add oil and salt. Stir in flour by hand or with mixer until stiff. Add additional flour while kneading to form a soft dough that cleans the side of the mixing bowl. Knead until smooth and elastic (about 3 minutes by machine, 10 minutes by hand). Form into a ball and let rise 1 hour if time allows. Rising is not strictly required but rising time adds to the flavor and texture of the crust. Prepare pizza pan with light greasing or pan spray and a dusting of cornmeal. Let dough rest about 10 minutes before patting or rolling to 1/2 to 3/4 inch thickness in the shape of the pan and place in pan. Without resting the dough will be very elastic and hard to form into the crust.
Sauce
1 small can tomato paste
1 tsp. dry oregano
1 tsp. dry basil
2 tsp. dry minced onion
1 clove garlic or 1/2 tsp. minced or powdered garlic
3 Tbs. wine or water
Combine ingredients to form a paste and spread over crust to within inch of the edge.
Top with 6-8 oz. of shredded Mozzarella or blended cheese and your favorite toppings.

Pepperoni
Black Olives
Mushrooms
Fresh Sliced Tomato
Pineapple Tidbits
Prosciutto (Italian Ham)
Bake 12-15 minutes until brown.

serves 8
1 unbaked pie shell
2-3 shallots, minced
9-11 oz. goat cheese
2 cloves garlic, minced
1/4 c. fresh dill
handful fresh spinach leaves
1 c. heavy cream
3 eggs
white pepper to taste
Preheat oven to 350
Saute shallots and garlic til limp. Stir in dill and spinach and let it wilt.
Puree cheese, cream, eggs and pepper. Blend together with spinach mixture and pour into pie shell.
Bake 45 mts at 350 til golden and puffy.

APPLESAUCE CINNAMON BREAD

1/3 cup applesauce
3/4 cup buttermilk
2 1/2 cups bread flour
1 tbsp cinnamon
1 tsp salt
2 tbsp brown sugar
1 tbsp butter
1 1/2 tsp yeast
Place all ingredients in pan in order listed in bread machine. Bake with light setting.

1/3 c. sugar
1/3 c. all-purpose flour
2 T. butter, softened
1 T. ground cinnamon
1/2 c. crushed almonds
2 c. all-purpose flour
1 t. baking powder

1 8 oz. pkg. cream cheese, softened
1 stick of butter, softened
1 1/2 c. sugar
2 large eggs
1/2 c. buttermilk
1 t. vanilla extract
1 t. almond extract
Preheat oven to 350. Grease and flour a bundt pan.
Combine 1st 5 ingredients, stir with a fork til mixture is crumbly. Sprinkle this mix onto the bottom of the pan evenly.
Combine 2 c. flour and next 3 ingredients in a bowl and set aside.
Beat cream cheese and butter til real fluffy. Gradually add the sugar, beating well. Add the eggs one at a time till all yellow disappears. Add the flour mix alternating with the buttermilk just til blended. Stir in the vanilla and almond.
Pour batter into pan and bake for 1 hour. Cool pan on wire rack for 10 minutes then invert and let cool completely.

Pepperoni Pizza Bread (bread machine)

3/4 c Water
2 c Bread flour
1/4 c Shredded Mozzarella cheese
1 tb Sugar
1 t Garlic salt
1 t Dried Oregano Leaves
1 t Bread Machine Yeast
1/2 c Sliced Pepperoni
Measure carefully, placing all ingredients, except pepperoni, in bread machine pan in the order recommended by the manufacturer. Add pepperoni at the raisin/nut signal, or 5 to 10 minutes before the last kneading cycle ends.
Select Basic/White cycle. Use Medium or Light crust color. DO NOT USE DELAY CYCLES. Remove baked bread from pan and cool on wire rack.
NOTE: This recipe is not recommended for 1 1/2 lb bread machines with cast aluminum pans in horizontal-loaf shape.

I've been experimenting with variations on a bran muffin recipe. Here's the
latest (and my favorite, so far!).
Makes about 18 muffins.
1/2 c. sugar
4 c. bran flakes, slightly crushed
3/4 tsp. baking soda
1/2 tsp. salt
1-1/4 c. flour
1/2 c. molasses
1/4 c. oil
1/2 c. Egg Beaters (or 2 eggs)
1-1/4 c. buttermilk
3/4 c. strong cold coffee
1 c. chocolate chips
Mix dry ingredients together in large bowl. Mix remaining ingredients together then add to dry ingredients. Fill paper-lined muffin tins and bake at 350 degrees for 25 minutes.
NOTE: For traditional bran muffins, increase buttermilk to 2 cups an omit coffee and chips (or add 1 c. raisins).

2 frozen waffles
2 tablespoons peanut butter or applesauce
Fruit pieces of your choice: banana, strawberry, raisins, etc.
Instructions:
1.Toast waffles.
2.Spread each waffle with one tablespoon peanut butter or applesauce.
3.Top with fruit pieces.
4.Put peanut butter or applesauce sides of waffles together to form a sandwich.
5.Serves one.

makes 12 large muffins
2 cups flour
1 cup raisin bran, slightly crushed
1 cup oatmeal
1 1/2 tsp. baking soda
2 egg whites
3/4 cup frozen apple juice concentrate, thawed
1/2 cup low fat yogurt, any flavor
1 cup mashed bananas
1 cup raisins soaked 10 minutes in boiling water
Combine flour, raisin bran, oatmeal and baking soda in a large bowl.
Beat egg whites in a small bowl until stiff peaks form, set aside.
Add apple juice, yogurt, bananas, and raisins to the flour mixture and stir to blend.
Fold in egg whites and mix well.
Spoon batter into paper liners or a no-stick muffin pan.
Bake at 400 degrees for 20 min.
note: The muffins are very dense and rise very little during baking.

Old-Fashioned Graham Crackers

4 tb Butter -- softened
1/3 c Sugar
3 tb Honey
1 tb Light Molasses
1 Egg
1 1/2 c Graham Flour
3/4 c Flour
1/2 ts Salt
1/2 ts Baking Soda
Adjust rack to lower third of oven, preheat to 350 F. Lightly grease a baking sheet or line it with parchment paper. Cream butter with sugar until creamy. Add molasses and honey, then beat in the egg until well blended. Stir in the flours, salt and baking soda until thoroughly combined. Dust a work surface generously with graham flour. Roll half the dough into a rectangle 1/8" thick.
Using a ruler and a knife, cut the dough into 3" squares. Lift the squares onto the baking sheet. Prick each square with the tines of a fork to form a line down the center. Roll out, cut and prick remaining dough. Bake crackers 8 minutes, then carefully turn over and bake and additional 5-6 minutes. Cool on a wire rack. Store in airtight tins.

Almond Rhubarb Coffee Cake
1 1/2 c. packed brown sugar
2/3 c. vegetable oil
1 egg
1 tsp. vanilla
2 1/2 c. flour
1 tsp. salt

1 1/2 c. finely chopped fresh or frozen rhubarb
1/2 c. sugar
Topping:
1/3 c. sugar
1 Tbls. butter, melted
1/4 c. sliced almonds
Beat brown sugar, oil, egg & vanilla until smooth.
Combine flour salt & baking soda; add to sugar mixture alternately with
milk.
Beat until smooth. Stir in Rhubarb & almonds. Pour into 2 greased
9-inch round cake pans. For topping, combine sugar & butter; stir in
almonds. Sprinkle over batter. Bake at 350 degrees F for 30-35 minutes
or test done.

Western Style Jalapeno Cornbread

1 cup cornmeal
1/3 cup all-purpose flour
1 tablespoon sugar -- optional
2 teaspoons double-acting baking powder
1/2 teaspoon baking soda
2 large eggs -- beaten
1 cup buttermilk
1/3 cup onions -- minced
1 cup creamed corn -- 8 ounce can
2 tablespoons green peppers -- minced
2 tablespoons jalapeno peppers -- chopped
1/2 cup cheddar cheese, shredded
Combine dry ingredients in mixing bowl. In a separate bowl add the beaten eggs and all the remaining ingredients, blending well. Add the two mixtures together and stir only until moistened.
Use a heavy cast iron skillet if available; if not, use a 9-inch square baking dish. Grease the skillet or dish, pour in the mixture and bake in a preheated 350-degree oven for 30-35 minutes or until golden brown. Cool slightly and serve immediately.

Banana Cinnamon Doughnuts

Yield: about 22 doughnuts and 22 centers
3 cups peanut oil -- for frying
4 cups all-purpose flour
3/4 cup sugar
4 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 cup margarine
1 cup bananas -- mashed
2 large eggs -- beaten
---- Topping: -----
3/4 cup sugar
2 teaspoons ground cinnamon1. Heat oil in a deep-fat fryer or deep heavy skillet. Time heating so it will be ready when you are prepared to begin frying doughnuts. Use Canola oil if you prefer, but peanut oil has a higher smoking point and is a good choice for frying.
2. In a large bowl, combine flour, sugar, baking powder, salt, cinnamon, and nutmeg. Cut in margarine using a pastry blender or two knives.
3. Make a well in center of mix and add mashed bananas and eggs. Mix well. You can do this with a wooden spoon, or since dough will be very stiff you may want to use your hands to mix it well.
4. Place dough on a lightly floured surface and roll to 1/2-inch thick. Cut with a 2-1/2 inch doughnut cutter that you dip in flour as needed.
5. Deep-fry, a few at a time, until golden brown. Drain on brown paper bags. Fry the doughnut "holes" also.
6. Combine sugar and cinnamon in a paper bag or place on a shallow plate. Coat warm doughnuts with this mixture.

1/3 c Pecans -- toasted and coarsely chopped

1 1/2 ts Lemon Peel -- finely shredded
1 1/2 ts Bread Machine Yeast
Add ingredients to bread machine pan in the order suggested by the manufacturer, adding pears with water and pecans with flour. Process on basic bread setting, light color setting, if available. For large capacity machines with glass domes, select medium/normal color setting to ensure complete baking. Time bake feature can be used.

Makes : 24
1 c Water
1 Egg
2 tb Oil
3 tb Nonfat Dry Milk Powder
1/2 ts Nutmeg
1 t Salt
3 1/2 c Bread Flour
2 1/2 ts Yeast
1/2 c Powdered Sugar
Place all ingredients except sugar in machine. Program for knead and first rise and press start. The dough will be sticky at first but will hold its shape. After the final cycle, it will be workable. When dough is finished, turn the dough out onto a floured surface and let it rest for 10 minutes. Roll the dough to a generous 1/4" thick and cut it into 2" squares.
Cover the squares with a clean towel and let rise for 30 minutes. Add the powdered sugar to a medium-size clean paper bag. Lay out paper towels to drain the doughnuts. Heat 1 to 1 1/2 " of oil to 375 F. Do not add too many; add once or it may cool the oil too much. Gently brush the uncooked squares to remove any extra flour. Slide them into the heated oil. When they pop to the surface, spoon the hot oil over them constantly until they are puffed. Turn the squares and cook until they are a light golden color on both sides. It should take 1 to 2 minutes. Cut the first couple of squares in half to be sure there is not sticky uncooked dough inside.
Remove from hot oil with slotted spoon and drain on paper towels. While warm, drop them, 3 or 4 at a time, into the bag with powdered sugar and shake until they are well coated. Serve immediately.

1 bag frozen country style hash browns (shredded potatoes, not cubed)
1/2 cup onion, chopped fine
1 1/2 cups Colby cheese, shredded
1 can cream of chicken soup
1/4 cup sour cream (more if the mixture appears dry)
2 T. vegetable oil
In a skillet heat oil. When hot add hash browns and onions. Season with seasoning salt. Cook until the hash browns are almost done.
Drain the hash browns and set aside. In a large bowl mix cheese and the can of cream of chicken soup. Add the hash browns to the soup/cheese mixture and stir until well blended. Place this in a greased 9 X 13 pan. Bake at 350 degrees until all is warm and the cheese has melted.

Easy Brunch Casserole
2 C. shredded cheddar cheese 1 can mushroom
soup
/ or potato soup
1 pkg. croutons (any flavor) 6 eggs
2 lbs. bulk sausage 3/4 tsp. reg. mustard
2 1/2 C milk 1 sm. can mushrooms
Place croutons in greased 9x13-inch pan. Put grated cheese over croutons. Brown sausage and drain.
Sprinkle over top of cheese. Beat eggs and mix with mustard, milk, soup, and mushrooms. Pour over sausage and bake, covered with foil at 300 degrees for 1 1/2 hours. May be prepared the night before and refrigerated.

1/3 cup applesauce
3/4 cup buttermilk
2 1/2 cups bread flour
1 tbsp cinnamon
1 tsp salt
2 tbsp brown sugar
1 tbsp butter
1 1/2 tsp yeast
Place all ingredients in pan in order listed in bread machine. Bake with light setting.

1/3 c. sugar
1/3 c. all-purpose flour
2 T. butter, softened
1 T. ground cinnamon
1/2 c. crushed almonds
2 c. all-purpose flour
1 t. baking powder
1/2 t. baking soda
1/2 t. salt
1 8 oz. pkg. cream cheese, softened
1 stick of butter, softened
1 1/2 c. sugar
2 large eggs
1/2 c. buttermilk
1 t. vanilla extract
1 t. almond extract
Preheat oven to 350. Grease and flour a bundt pan.
Combine 1st 5 ingredients, stir with a fork til mixture is crumbly. Sprinkle this mix onto the bottom of the pan evenly.
Combine 2 c. flour and next 3 ingredients in a bowl and set aside.
Beat cream cheese and butter til real fluffy. Gradually add the sugar, beating well. Add the eggs one at a time till all yellow disappears. Add the flour mix alternating with the buttermilk just til blended. Stir in the vanilla and almond.
Pour batter into pan and bake for 1 hour. Cool pan on wire rack for 10 minutes then invert and let cool completely.

Pepperoni Pizza Bread (bread machine)

3/4 c Water
2 c Bread flour
1/4 c Shredded Mozzarella cheese
1 tb Sugar
1 t Garlic salt
1 t Dried Oregano Leaves
1 t Bread Machine Yeast
1/2 c Sliced Pepperoni
Measure carefully, placing all ingredients, except pepperoni, in bread machine pan in the order recommended by the manufacturer. Add pepperoni at the raisin/nut signal, or 5 to 10 minutes before the last kneading cycle ends.
Select Basic/White cycle. Use Medium or Light crust color. DO NOT USE DELAY CYCLES. Remove baked bread from pan and cool on wire rack.
NOTE: This recipe is not recommended for 1 1/2 lb bread machines with cast aluminum pans in horizontal-loaf shape.

I've been experimenting with variations on a bran muffin recipe. Here's the
latest (and my favorite, so far!).
Makes about 18 muffins.
1/2 c. sugar
4 c. bran flakes, slightly crushed
3/4 tsp. baking soda
1/2 tsp. salt
1-1/4 c. flour
1/2 c. molasses
1/4 c. oil
1/2 c. Egg Beaters (or 2 eggs)
1-1/4 c. buttermilk
3/4 c. strong cold coffee
1 c. chocolate chips
Mix dry ingredients together in large bowl. Mix remaining ingredients together then add to dry ingredients. Fill paper-lined muffin tins and bake at 350 degrees for 25 minutes.
NOTE: For traditional bran muffins, increase buttermilk to 2 cups an omit coffee and chips (or add 1 c. raisins).

Materials:
2 frozen waffles
2 tablespoons peanut butter or applesauce
Fruit pieces of your choice: banana, strawberry, raisins, etc.
Instructions:
1.Toast waffles.
2.Spread each waffle with one tablespoon peanut butter or applesauce.
3.Top with fruit pieces.
4.Put peanut butter or applesauce sides of waffles together to form a sandwich.
5.Serves one.

makes 12 large muffins
2 cups flour
1 cup raisin bran, slightly crushed
1 cup oatmeal
1 1/2 tsp. baking soda
2 egg whites
3/4 cup frozen apple juice concentrate, thawed
1/2 cup low fat yogurt, any flavor
1 cup mashed bananas
1 cup raisins soaked 10 minutes in boiling water
Combine flour, raisin bran, oatmeal and baking soda in a large bowl.
Beat egg whites in a small bowl until stiff peaks form, set aside.
Add apple juice, yogurt, bananas, and raisins to the flour mixture and stir to blend.
Fold in egg whites and mix well.
Spoon batter into paper liners or a no-stick muffin pan.
Bake at 400 degrees for 20 min.
note: The muffins are very dense and rise very little during baking.

My notes** This is especially good for toast. I might even be tempted to add a bit of food coloring to give it a deeper orange color.

Old-Fashioned Graham Crackers

4 tb Butter -- softened
1/3 c Sugar
3 tb Honey
1 tb Light Molasses
1 Egg
1 1/2 c Graham Flour
3/4 c Flour
1/2 ts Salt
1/2 ts Baking Soda
Adjust rack to lower third of oven, preheat to 350 F. Lightly grease a baking sheet or line it with parchment paper. Cream butter with sugar until creamy. Add molasses and honey, then beat in the egg until well blended. Stir in the flours, salt and baking soda until thoroughly combined. Dust a work surface generously with graham flour. Roll half the dough into a rectangle 1/8" thick.
Using a ruler and a knife, cut the dough into 3" squares. Lift the squares onto the baking sheet. Prick each square with the tines of a fork to form a line down the center. Roll out, cut and prick remaining dough. Bake crackers 8 minutes, then carefully turn over and bake and additional 5-6 minutes. Cool on a wire rack. Store in airtight tins.

Almond Rhubarb Coffee Cake
1 1/2 c. packed brown sugar
2/3 c. vegetable oil
1 egg
1 tsp. vanilla
2 1/2 c. flour
1 tsp. salt
1 tsp. baking soda
1 c. milk
1 1/2 c. finely chopped fresh or frozen rhubarb
1/2 c. sugar
Topping:
1/3 c. sugar
1 Tbls. butter, melted
1/4 c. sliced almonds
Beat brown sugar, oil, egg & vanilla until smooth.
Combine flour salt & baking soda; add to sugar mixture alternately with
milk.
Beat until smooth. Stir in Rhubarb & almonds. Pour into 2 greased
9-inch round cake pans. For topping, combine sugar & butter; stir in
almonds. Sprinkle over batter. Bake at 350 degrees F for 30-35 minutes
or test done.

Heat oven to 425F. Grease 12 muffin cups. Combing all ingredients in a medium bowl. Stir just until the ingredients are moistened. Divide into 12 equal portions, one in each muffin cup. Bake for 20 minutes. That's it!

Western Style Jalapeno Cornbread

1 cup cornmeal
1/3 cup all-purpose flour
1 tablespoon sugar -- optional
2 teaspoons double-acting baking powder
1/2 teaspoon baking soda
2 large eggs -- beaten
1 cup buttermilk
1/3 cup onions -- minced
1 cup creamed corn -- 8 ounce can
2 tablespoons green peppers -- minced
2 tablespoons jalapeno peppers -- chopped
1/2 cup cheddar cheese, shredded
Combine dry ingredients in mixing bowl. In a separate bowl add the beaten eggs and all the remaining ingredients, blending well. Add the two mixtures together and stir only until moistened.
Use a heavy cast iron skillet if available; if not, use a 9-inch square baking dish. Grease the skillet or dish, pour in the mixture and bake in a preheated 350-degree oven for 30-35 minutes or until golden brown. Cool slightly and serve immediately.

Banana Cinnamon Doughnuts

Yield: about 22 doughnuts and 22 centers
3 cups peanut oil -- for frying
4 cups all-purpose flour
3/4 cup sugar
4 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 cup margarine
1 cup bananas -- mashed
2 large eggs -- beaten

3/4 cup sugar
2 teaspoons ground cinnamon1. Heat oil in a deep-fat fryer or deep heavy skillet. Time heating so it will be ready when you are prepared to begin frying doughnuts. Use Canola oil if you prefer, but peanut oil has a higher smoking point and is a good choice for frying.
2. In a large bowl, combine flour, sugar, baking powder, salt, cinnamon, and nutmeg. Cut in margarine using a pastry blender or two knives.
3. Make a well in center of mix and add mashed bananas and eggs. Mix well. You can do this with a wooden spoon, or since dough will be very stiff you may want to use your hands to mix it well.
4. Place dough on a lightly floured surface and roll to 1/2-inch thick. Cut with a 2-1/2 inch doughnut cutter that you dip in flour as needed.
5. Deep-fry, a few at a time, until golden brown. Drain on brown paper bags. Fry the doughnut "holes" also.
6. Combine sugar and cinnamon in a paper bag or place on a shallow plate. Coat warm doughnuts with this mixture.

1 tb Butter or Margarine
3/4 ts Salt
2 c Bread Flour
1/3 c Pecans -- toasted and coarsely chopped
2 ts Packed Brown Sugar
1 1/2 ts Lemon Peel -- finely shredded
1 1/2 ts Bread Machine Yeast
Add ingredients to bread machine pan in the order suggested by the manufacturer, adding pears with water and pecans with flour. Process on basic bread setting, light color setting, if available. For large capacity machines with glass domes, select medium/normal color setting to ensure complete baking. Time bake feature can be used.

Makes : 24
1 c Water
1 Egg
2 tb Oil
3 tb Nonfat Dry Milk Powder
1/2 ts Nutmeg
1 t Salt
3 1/2 c Bread Flour
2 1/2 ts Yeast
1/2 c Powdered Sugar
Place all ingredients except sugar in machine. Program for knead and first rise and press start. The dough will be sticky at first but will hold its shape. After the final cycle, it will be workable. When dough is finished, turn the dough out onto a floured surface and let it rest for 10 minutes. Roll the dough to a generous 1/4" thick and cut it into 2" squares.
Cover the squares with a clean towel and let rise for 30 minutes. Add the powdered sugar to a medium-size clean paper bag. Lay out paper towels to drain the doughnuts. Heat 1 to 1 1/2 " of oil to 375 F. Do not add too many; add once or it may cool the oil too much. Gently brush the uncooked squares to remove any extra flour. Slide them into the heated oil. When they pop to the surface, spoon the hot oil over them constantly until they are puffed. Turn the squares and cook until they are a light golden color on both sides. It should take 1 to 2 minutes. Cut the first couple of squares in half to be sure there is not sticky uncooked dough inside.
Remove from hot oil with slotted spoon and drain on paper towels. While warm, drop them, 3 or 4 at a time, into the bag with powdered sugar and shake until they are well coated. Serve immediately.

1 bag frozen country style hash browns (shredded potatoes, not cubed)
1/2 cup onion, chopped fine
1 1/2 cups Colby cheese, shredded
1 can cream of chicken soup
1/4 cup sour cream (more if the mixture appears dry)
2 T. vegetable oil
In a skillet heat oil. When hot add hash browns and onions. Season with seasoning salt. Cook until the hash browns are almost done.
Drain the hash browns and set aside. In a large bowl mix cheese and the can of cream of chicken soup. Add the hash browns to the soup/cheese mixture and stir until well blended. Place this in a greased 9 X 13 pan. Bake at 350 degrees until all is warm and the cheese has melted.

Easy Brunch Casserole
2 C. shredded cheddar cheese 1 can mushroom
soup
/ or potato soup
1 pkg. croutons (any flavor) 6 eggs
2 lbs. bulk sausage 3/4 tsp. reg. mustard
2 1/2 C milk 1 sm. can mushrooms
Place croutons in greased 9x13-inch pan. Put grated cheese over croutons. Brown sausage and drain.
Sprinkle over top of cheese. Beat eggs and mix with mustard, milk, soup, and mushrooms. Pour over sausage and bake, covered with foil at 300 degrees for 1 1/2 hours. May be prepared the night before and refrigerated.
