Recently I attended a King Arthur baking class. The instructor said to add the yeast at the very beginning instead of at the end on top of the flour. My bread instruction books have always said to add the yeast last. The instructor said adding it first gave it more working time. I tried it and have had better loaves ever since. I won't go back to adding it last. You might try it. It has helped even more when using the dough cylce. I feel the yeast wasn't having the time it needed to work. Hope this info is useful to you.
