I discovered this recipe on the Food Network and couldn't believe how easy (and good) it was. I had a friend's husband stay with me for a month, and she had to call me for the recipe because he wouldn't stop talking about it!
1 pork loin/chop (I use top loin)
grated parmesan cheese
egg white
bread crumbs
vegetable oil (for browning)
Coat the loin in parmesan cheese, dip it in the egg white, then finish it with a coat of bread crumbs.
Brown each side in a lightly oiled frying pan (30-60 sec each side) and place in a baking dish.
Bake at 350 degrees for 30-40 min (depending on the thickness of the loin).
Enjoy!!
