Recipe: Breakfast Cookies for Lou

Breakfast Cookies

1 1/2 cups Muesli or Red River Cereal
1/2 cup millet flour (grind millet in blender or grinder)
1/3 cup rice syrup
1/4 cup chopped dried fruit
1/4 cup chopped nuts
3/4 cup brown sugar or Sucanat
1/4 cup mashed cooked pumpkin
1/3 cup mashed banana or 1/3 cup applesauce
Ener-G for 1 egg, prepared (egg substitute. If you are not vegetarian use 1 whole egg)
1/4 tsp salt
1 tsp vanilla or almond extract

Mix all ingredients thoroughly. If too dry, add a little fruit juice. If too wet, add a little more cereal. Drop by large spoonfuls onto a sprayed, no-stick baking sheet. Bake at 350 F for about 10 minutes, or to desired firmness. Don't let 'em burn! Remove from pan, and let cool.
