Recipe(tried): Breakfast in a Mug

Breakfast and Brunch
This is a fun way to serve routine breakfast ingredients - something that a kid would probably get a kick out of, plus it tastes really good! Got this recipe from a friend and tried it out on DH who liked it, too.

BREAKFAST IN A MUG

1 piece of American cheese, torn into small pieces
2 eggs
some "real" bacon bits (Oscar Meyer puts out chunks in a pkg)
tsp or two of finely diced onion or chives (optional)
salt or pepper to taste - go easy on the salt.

Lightly spray a mug with Pam. Drop the pieces of cheese into the bottom. Put the 2 eggs in and whip them up really well with a fork, then add bacon bits and onions/chives, stirring them in. You can also add any other ingredient you might have left over - such as ham bits, etc.

Microwave on high for about 40 seconds - check to see if the eggs are done underneath the top layer which puffs up! You may need to put it back in for another 20-40 seconds more. Add 5 seconds for each ingredient you add other than the eggs - start with 40 seconds if just doing it plain.

It really is very tasty and fun - something different from the regular breakfast, and also fast!
