Recipe: Stuffed Tomatoes Florentine (microwave or oven)
Breakfast and BrunchSTUFFED TOMATOES FLORENTINE
6 medium tomatoes
1 (10 ounce) pkg frozen spinach, thawed and drained
8 ounces (1 cup) cottage cheese
1/2 cup bread crumbs
1/2 cup shredded cheddar cheese
3/4 teaspoon salt
1/4 teaspoon pepper
1 egg, slightly beaten
Cut a slice, about 1/4 inch thick, off top of each tomato. With a spoon, scoop out pulp and seeds. In 9-inch shallow round serving plate, arrange tomatoes in circle.
In medium bowl, mix spinach, cottage cheese, bread crumbs, Cheddar cheese, salt, pepper, and egg. Spoon mixture into tomato shells, mounding slightly.
Cover dish with plastic wrap, cook in the microwave* in High 3 to 4 minutes or until stuffed tomatoes are heated through, rotating dish 1/4 turn halfway through cooking. Let stand, covered, 3 minutes before serving.
*Instead of microwaving, the stuffed tomatoes may be placed in a baking dish and baked in a 350 degree oven for about 30 minutes.
Make 6 accompaniment servings
