Recipe: Vanilla Belgian Waffles
Breakfast and BrunchVANILLA BELGIAN WAFFLES
2 cups unbleached all-purpose flour
1 tablespoon baking powder
1 tablespoon sugar
Pinch salt
3 large eggs
1/4 pound (1 stick) butter, melted
1 1/2 cups whole milk
1 tablespoon pure vanilla extract
Heat a Belgian waffle iron to medium-high or follow manufacturer's directions. In a bowl, combine flour, baking powder, sugar and salt.
In another bowl, beat eggs 2 minutes until thick and foamy. Add butter, milk and vanilla. Add dry ingredients and beat until smooth; do not overmix.
Brush waffle iron grids with oil or melted butter. Pour batter onto grid, depending on size of the iron. Close lid and bake 4 to 5 minutes until waffle is crisp and golden. Serve immediately.
Makes 6 servings
