Breakfast and Brunch
Hi Carol, I love to do breakfasts. Here are a few of my favorites.

This recipe is different and is always a hit at brunches. It is very delicious.
Baked Bananas
Serves 6

l/3 cup butter melted
3 tbsp fresh lemon juice
6 firm ripe bananas, peeled
1/3 cup brown sugar
1 tsp cinnamon
1 cup grated coconut

Heat oven to 375 degrees

Mix butter and lemon juice spread over bottom of shallow
baking dish that will hold 6 bananas.
Put the bananas in the dish and turn them so they are well coated.

Mix sugar and cinnamon together and sprinkle over bananas.

Bake 18-20 min turning once after the first l0 min of baking. Sprinkle the coconut over the bananas and return to the oven for the remaining 8-10 min.

Serve with a little cream or maple syrup. Crab Casserole
This casserole will serve 8.

1/2 cup melted butter
12 eggs
1/2 cup milk
1 tsp salt
1/2 tsp white pepper
1/2 tsp dried dill weed
8 oz crabmeat (real or imitation) chopped
8 oz cream cheese cut into 1/2" cubes
Paprika

Pour the melted butter into baking dish 8x8x2.

Beat eggs, milk, salt, pepper and dill weed.
Stir in crabmeat and cheese. Pour into baking dish. sprinkle with paprika.

Bake at 350 degrees for 25-30 min.This recipe will serve l0 and can be made the night before, refrigerated and baked in the morning just before serving if desired.

Eggs Benedict Casserole

10 poached eggs
2 cups diced ham

Mornay Sauce
1/4 cup butter
l/4 cup flour
1/2 tsp salt
1/8 tsp nutmeg
2 1/2 cups milk
1 l/2 cups swiss cheese, shreddedPut butter into saucepan and melt. Stir in flour, salt and nutmeg. Return to heat and stir until flour is thoroughly blended. Add milk 1/2 cup at a time and stir until thickened. Add cheese and stir until melted.

heat oven 350 degrees

Spray bottom and sides of 13x9x2 baking and serving dish with cooking spray
Spread diced ham evenly on bottom of dish.

Poach eggs by boiling water in a large pan. when at full boil, break each egg into a small cup and gently slide into water. Remove pan from heat and cover with lid. Set aside.

Place eggs on top of ham and pour sauce over.
Bake 35-40 min.

Morning Mix Up

2 cups frozen hash browns
1 cup chopped fully cooked ham
1/2 cup chopped onion
2 tbsp cooking oil
6 eggs
salt & pepper to taste
1 cup shredded cheddar cheese
Minced fresh chives

In large skillet saut potatoes, ham and onion in oil for about 10 min. In a small bowl beat eggs, salt and pepper. Add to the skillet and cook stirring occasionally until eggs are set. Remove from heat and gently stir in cheese. Spoon onto serving platter and sprinkle with chives.
I like to eat salsa on my morning mix up.

Serves 4

SWISS EGG BAKE
12 French bread slices ( 1/2 - inch thick), buttered on 1 side

2 cans (103/4 ounces each) cream of chicken soup, undiluted

1 cup milk

1 tablespoon plus 1 teaspoon minced dried onions

1 teaspoon prepared yellow mustard

8 ounces (2 cups) shredded Swiss cheese

12 eggs

Parsley

Arrange the bread slices, greased sides out, along the sides of a greased 16x10-inch baking dish.

In a saucepan, combine the soup, milk, onions and mustard. Cook and stir until smooth and bubbly. Remove from the heat. Add the cheese by handfuls and stir after each addition until melted.

Pour 1 cup of the cheese mixture into the baking dish. Break the eggs into the sauce, spacing them evenly. Carefully spoon the remaining sauce around the eggs.

Bake at 350˜ for 20 minutes or until the eggs are set. Garnish with parsley. Makes 8-12 servings.
