SWEET AND SOUR ORANGE MARINADE FOR SHRIMP
1 Anaheim chile, seeded and minced (wear gloves to do this)
3 large garlic cloves, minced
2 teaspoons orange zest
1 teaspoon peeled, minced ginger
2 tablespoons soy sauce
2 tablespoons dry sherry
1 tablespoon hoisin sauce
2 teaspoons dark sesame oil
2 teaspoons red wine vinegar
1/2 teaspoon salt
1/4 teaspoon sugar
1/4 teaspoon round Szechuan pepper
1 pound uncooked shrimp
In a medium bowl, whisk together all ingredients except the shrimp. Add the shrimp to the marinade. Cover and refrigerate an hour or two.
To grill the shrimp, thread them onto skewers. It is easier to turn the shrimp if you use two skewers for each portion of shrimp, placing them about an inch apart.
Grill shrimp on one side until the side next to the heat turns pink. Turn them over and grill the other side. They are done with both sides have lost their translucence. Do not overcook them or they will turn rubbery.
Makes enough for 1 pound of shrimp
