BUTTER BROILED STEAK
1 pound boneless beef chuck steak, about 3/4-inch thick
FOR THE SEASONED BUTTER:
1/4 cup butter
2 tablespoons minced parsley
2 tablespoons minced onion
1/2 teaspoon dry mustard
1/2 teaspoon salt
1/4 teaspoon pepper
1 medium clove garlic, minced
Melt butter and add parsley, onion, mustard, salt, pepper and garlic.
Trim excess fat from steak. Cut 1/4-inch diagonal slashes across steak on both sides. Place steak on rack on broiler pan. Brush on half of the seasoned butter.
Broil 3 inches from heat 5 or 6 minutes. Turn, brush with remaining seasoned butter and complete broiling.
Makes 2 servings
