Recipe(tried): Buttermilk is the secret

Prepare your chicken peices by sprinkling with salt, pepper and paprika to
taste. If you are really adventurous, a cajun spice mix is preferred. Let 'rest'
for about ten minutes. Ready a bowl of buttermilk and a bowl of flour with your
perferred seasonings (as above). Dip each peice in buttermilk and then flour.
Repeat! Brown in very hot oil a few inches deep in a heavy skillet. Cover
slightly and cook until done, turning occasionally.
