Recipe(tried): Cali's Fried Chicken

I attribute this whole recipe to Cali - wherever you are sweetie!!

______________________________________________________________________________CALI'S FRIED CHICKEN

"" ( maybe should be called Okie- Fried 'cause my Mom is from there & this is
what she taught me ):

1 frying chicken, disjointed (or your fav. pieces--last night I used bone-in
breasts-on sale)
about 3/4 C flour
1 tsp. season salt
1/2 tsp. salt
3/4 tsp. pepper
1/2 tsp. garlic powder
2 tsp. paprika

Combine flour & all seasonings in a baggie,set aside. Rinse chicken well & set
on paper towels. Heat oil in electric skillet to 375 deg. When good & hot,
shake chicken pieces, 1 at a time in the flour mixture & place carefully in hot
oil. When golden brown, turn with tongs (not a fork-cause juices escape). Total
cooking time is 1 hour-- just watch it carefully & turn every once in awhile.
When chicken is done, remove all but 3 Tbsps. of fat from pan. (put chicken on
platter & set in low oven). To drippings in pan, add 2 Tbsps. butter & some
flour--- I never measure it & to tell the truth this is the first time i've
tried to write out this recipe----probably 1/2 C. flour, stir around until it
is good & sizzling, but don't let it burn--I always use a wire whisk so the
gravy doesn't get lumpy. Now slowly stir in about 3 C of milk, or part milk and
some cream ( well, I did say it is an indulgence, didn't I )? Well I think
you've got the general idea---the gravy may need more milk --I just guess!!!
salt & pepper to taste & I usually sprinkle in 2 tsps. of chicken bouillion
granuals-- it really adds to the gravy.

I prefer using an electric skillet because my stove-top is old & I had trouble
burning
chicken (cheaper to buy elec. skillet, than to replace stove!!!)

GOOD LUCK & hope your family enjoys this as much as we do ( this was my late
father's favorite food-- I think he married my mom 'cause she could fry up one
