Wow! someone from Stuttgart. I grew up in DeWitt. My sister and lots of other family live there.
Ok ideas- Below you will find a recipe for a herb cheese cake and a shrimp mold- serve both with crackers or toasted bread rounds. Also a spinach casserole thaty is great made in tart shells.

HERB CHEESECAKE
Reci Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
11/2 lb cream cheese - room temp.
2 large eggs -- beaten
2 tablespoons cornstarch
1 cup sour cream
1/2 cup feta cheese -- crumbled
1/2 cup Romano cheese -- grated
8 sun-dried tomatoes in oil -- chopped
1 Tablespoon garlic crushed -- more if you like
1/2 teaspoon basil,thyme,oregano
hot sauce -- few drops
1 tablespoon horseradish
CRUST:
2 cups sociable crackers -- crushed
1/2 stick butter -- melted

Preheat oven to 400 degrees
In large bowl, beat cream cheese and till smooth and light
Beat in eggs and cornstarch, only until mixed
Stir in sour cream and all other ingredients until well blended.
Pour into prepared crust and bake 45 minutes.
Allow to cool in oven, with door slightly open for 3 hours.
Remove from pan and chill.
Crust:
Blend ingredients well.
Press into the bottom and partly up the sides of a greased 9 inch spring form pan.Smooth bottom to even thickness.Pour in filling.

SHRIMP MOLD
Reci Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 can tomato soup
8 ounces cream cheese -- softened
1 envelope unflavored
1/4 cup water
1 bunch green onions -- chopped
3 pounds shrimp -- boiled in crab boil
1 cup mayonnaise
2 tablespoons lemon juice
1 tablespoon horseradish
1/2 cup celery -- chopped fine
1 teaspoon Cajun seasoning -- (according to taste0
hot sauce -- to taste

Heat in sauce pan-- soup and cream cheese.
Fold in remaining ingredients.
Pour into lightly greased mold.
Chill until firm- over night.
Serve on a bed of lettuce with crackers.

MICHELE'S SPINACH CASSEROLE
Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 packages frozen spinach -- chopped, cooked
-- and drained
2 onions -- chopped (sauteed til clear)
1 cup cheese -- grated
1 can cream of mushroom soup
1 cup mayonnaise
2 eggs
buttered bread crumbs

Combine first 6 ingredients.
Spoon into tart shells.
Sprinkle with bread crumbs.
Bake until shells are brown- about 20 minutes at 350 degrees.
