Recipe: Hi BV, here are two more

recipes you might like, one cold, one warm. Oh, I live in Hot Springs Village, about 18 miles from Hot Springs.
Shrimp Saganaki (makes 3 dozen
1 10-ounce pkg frozen artichoke hearts
4 tbl olive oil
1 pound shrimp, cooked and shelled
1/2 pound small mushrooms
2 cloves garlic, crushed
1/2 tsp salt
dash of pepper
1/2 oregano
2 tbl lemon juice
2 tbl parsley, finely chopped (fresh)

Blanch artichoke hearts in boilng water for 2 minutes. Heat olive oil in a skillet, add shrimp and mushrooms. Cook, stirring, for several minutes. Add drained artichokes, garlic, salt, pepper, and oregano. When mixture is hot, sprinkle with lemon juice and stir lightly. Top with parsley and place over a warmer to keep hot. Serve with picks.

Mirinated Shrimp

2 1/2 pounds shrimp, fresh r frozen
1 cup mild white onion, thinly sliced
1 1/4 cups salad oil
1 1/2 tbl salt
3/4 cup white vinegar
dash of Tabasco sauce
2 1/2 tsp celery seed
2 1/2 tbl capers and juice

Cook the shrimp in boiling salted water. Cool and shell. In a shallow dish, alternate layers of shrimp and sliced very thin onions.
Mix the remaining ingredients together, and pour over shrimp and onions. Refrigerate at least 24 hours, stirring occasionally. Serve in a shallow bowl with marinade, and supply cocktail picks.

I didn't tell you those pizza on a rye the men absolutely love.
