ISO: Need helpful advice, ideas & recipes

Everyone is always so willing to help out here so I thought I would ask for your help. We just moved here a year ago and are slowly getting to know some nice people. We have been invited to some parties at some homes and have participated with our Sunday School group on cookouts at lake. So we would like to have a cocktail part at our house to return the favors and entertain our new friends. Since Valentines Day is just aroun the corner we thought that might be a good occasion. But the time is a big question, we want to have pick up food and cocktails but don't want to have a whole meal for them. What time do you think would be best for a couple of hours of snack, drinks and fellowship? 5-7p.m. 7-9p.m. 4-6p.m. We want everyone to feel at ease and if they choose to stay beyond the desiginated time it won't matter, but we want our food to be appropriate. We would like to have it on Sunday, Valentines Day.
We will be inviting around 100 people so I have no idea how many people to expect, never have entertained here before.

Now what about food? I would like to use our silver and crystal and have a pretty table. I have a great recipe for a cheese mold with Strawberry Jam on top and thought I could make a large mold and shape it in the shape of a heart.
I have tons of frozen tart shells that I have seen chicken and ham salad served in but didn't know if that is not appropriate since it's so cold out. How could I use them hot? A Vegetable tray and something always is good for the dieters, got any good idea for that? I do have a silver chafing dish I could use, but don't have a clue what to make to put in it. My oven has a warming tray so anything that needs to stay hot can in that tray. We are willing to have heavy foods but don't want to have to use silverware, just pick up food. We still have a whole turkey frozen, I guess I could smoke that and slice and make homemade rolls and have small sandwiches. (Don't know exactly how to smoke turkey and don't have a good recipe for the rolls.)

Will all of you guys help me with some ideas and recipes? I don't have any real close friends here, you all seems to be good friends to everyone. Hopefull you will allow me to be your friend in my time of need. I promise I will return any favor I can, if needed.
