Hi Bv, Welcome! You sure have come to the right site with the most wonderful people. I have made such wonderful new friends the past 2 months. Your party sounds like it will be wonderful. I would prefer the 7-9 time period. Your guests will not expect dinner and will be ready for great appetizers by 7pm. I like to entertain this way. Have your table beautifully arranged with your appetizers and desserts, hot tea,coffee,iced tea and I like to have egg nog also with the desserts. It is nice if you can have everything out in one area,for your guests to help themselves, and you can enjoy yourself! Most of the following recipes I have posted before, but do not remember when, so I will give them to you. Most of my party recipes are from a cook book I have had for years "The Keep It Short and Simple Party Menu Book". Hope this will be of help to you.

MINIATURE OPEN -FACED BROILED HMBURGERS
YIELD: 100
Equipment: cookie sheets
25 slices white bread
2 eggs
3 pounds extra-lean ground round steak, ground to order if possible
1 cup Ketchup


Method: Cut small rounds out of each piece of bread with biscuit cutter. Place in single layer on cookie sheet.
Beat eggs until fluffy. Combine with ground beef in large bowl. Scoup out 1 rounded teaspoon and roll between palms to make small meat balls, then flatten slightly. Sprinkle with salt and pepper.
Place a patty on each bread round.
Top each with approximately 1/4 teaspoon ketchup.
Broil in preheated oven for 4-5 minutes or until slightly brown.
Arrange on serving plate and serve ,piping hot.
