Friends served this filling soup with a whole grain bread the other night and graciously shared the recipe. The seemingly large amount of butter/margarine really adds to the satisfying richness of the soup.

Saute 1 chopped onion in one stick of butter until slightly caramelized. Add 1 fresh clove of garlic, minced. Add 3 diced potatoes (yellow finn or another tasty variety is nice) with enough water to cover. Bring to a boil then lower to a simmer. After the potatoes are soft (about 1/2 hour) add 1/2 head of chopped cabbage and simmer until tender. Add salt and pepper to taste.
