PISTACHIO CRUSTED SALMON
This is a more exact recipe, easy enough and extremely flavorful.
1 lb. salmon filets, skin removed (or any other fish filets such as tilapia)
salt and pepper
PISTACHIO PASTE:
juice of 1 to 2 fresh limes
2 tbsp pistachio nut butter
2 tbsp chopped fresh herbs (parsley, basil or whatever you prefer)
2 cloves fresh garlic, chopped
Preheat oven to 425. Spray foil baking pan with nonstick cooking spray.
Put salmon in pan and season with salt and pepper.
Bake for about 10 minutes.
While fish is baking, mix together remaining ingredients to form a paste.
Spread pistachio paste on baked salmon and put under broiler about 5 minutes (watch carefully so that topping does not burn).
Serve and enjoy!
